Summer recipes: Shrimp, potato, and corn boil

Summer is here, and I'm trying to enjoy it. It's not my favorite time of year, but making the most of it and trying to have a good attitude as I pray that El NiƱo means a quiet hurricane season. I got a cheap, very basic outdoor lounge chair from Amazon and have been spending, or trying to spend, every Saturday and Sunday afternoon laying out for twenty minutes (ten for the front, ten for the back). I was looking a bit pasty so wanted to get a little color without ending up resembling Magda from There's Something About Mary. Exposure to the sun in moderation is good for you, and sunscreen actually isn't. 

I'm also enjoying the extra light and the lighter traffic on my work commute from school being out.

But I digress. 

So far this summer, I've made a couple of recipes that I just love and plan on making a lot throughout the season. 

The first is something I just kind of made up and call shrimp, potato, and corn boil. It's actually steamed, but I think it still qualifies as a "boil" anyway. It checks all the boxes for me: inexpensive, easy to make, delicious. healthy-ish, and easy to clean up. 


Ingredients and equipment:

Jumbo shrimp, fresh or frozen

Small red potatoes

Corn on the cob, fresh or frozen

Butter

Salt

Garlic powder 

Old Bay seasoning

Lemon

A pot, either medium or large, depending on how much you're making.

A steamer basket

Directions:

Add some water to the pot, along with a steamer basket. The water should just come up to the basket, no deeper. Turn the burner to just under medium ("4" for me)

Add the potatoes, whole, and the corn on the cob, cut in half if using regular sized  fresh ears.

Add butter, salt, garlic powder, and Old Bay and put the lid on. Cook for about 1 hour.

Add the shrimp (peeled or unpeeled, it's up to you) and cook for an additional 5 minutes. Shrimp cooks very quickly, and is rubbery if overcooked, so it's better to let the potatoes and corn go for longer than to add the shrimp too soon. 

Plate up and add some of the buttery steaming juices, especially to the potatoes.. I also like to top with more butter and all the other seasonings (garlic, salt, and Old Bay) and squeeze over some lemon juice.

Sooo good, and clean-up is easy, with only a steamer basket and a pot to wash.
